As the founder of Minnie's Food Pantry, established in 2008 to honor her late mother, the late Dr. Minnie Hawthorne-Ewing, Dr. Jackson has served over 27 million meals and expanded the pantry from a small 500-square-foot building to 12 locations and 28,000 square feet headquartered in Plano, Texas.
